Pierce the gap at the hinge in the back of the oyster with a knife. (Anne Cusack / Los Angeles Times)
Slide the knife into the gap and give it a twist to pop the hinge. (Anne Cusack / Los Angeles Times)
Run the blade along the top shell to severing it from the oyster. (Anne Cusack / Los Angeles Times)
